Ghee is highly praised in Ayurveda and considered one of the greatest of foods. It is frequently cited in ancient Sanskrit texts as one of the main Sattvic foods – foods that create harmony in mind and body. Ghee is the oil extracted from butter and Ayurveda consider it the best both cooking and for health.
Unlike vegetable oils, most of which oxidise and become toxic when heated, the molecular structure of ghee is very stable. This means it can be heated to high temperatures without loosing its structure and becoming toxic. Ghee is said to balance all three Doshas.
